Instructions:
Prepare the Steak:
- Take the steaks out of the refrigerator and let them come to room temperature, for about 30 minutes. This helps ensure even cooking.
- Pat the steaks dry with paper towels. Season generously with salt and pepper on both sides.
- Heat a heavy-bottomed skillet (cast iron is ideal) over medium-high heat until hot. Add the olive oil and swirl to coat the bottom of the pan.
Cooking the Steak:
- Carefully place the steaks in the hot pan. Cook without moving for about 3-4 minutes, depending on the thickness of your steaks and desired doneness for medium-rare.
- Flip the steaks using tongs and cook for another 3-4 minutes for medium-rare. Adjust the cooking time according to your preference (see notes below for doneness levels).
- Optional: In the last minute of cooking, add minced garlic, butter, and fresh herbs to the pan. Tilt the pan slightly and spoon the melted butter over the steaks continuously for extra flavor.
Resting and Serving:
- Remove the steaks from the pan and let them rest on a cutting board or plate tented loosely with foil for about 5 minutes. This allows the juices to redistribute and ensures a juicy steak.
- Slice the steaks against the grain and serve immediately with your favorite sides like mashed potatoes, roasted vegetables, or a crisp salad.
Notes:
Cooking times can vary based on the thickness of the steaks and your desired level of doneness:
- Rare: 2-3 minutes per side
- Medium-rare: 3-4 minutes per side
- Medium: 4-5 minutes per side
- Well done: 5-6 minutes per side (though it's generally not recommended for tender cuts like ribeye or sirloin)
Make sure to use a meat thermometer to check for doneness: 120°F for rare, 130°F for medium-rare, 140°F for medium, and 150°F for well-done.
