Vegan Chickpea Salad Sandwich
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup vegan mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup diced pickles
- Salt and pepper to taste
- 4 slices of whole-grain bread
- Lettuce leaves
- Tomato slices

Instructions:
- In a medium bowl, mash the chickpeas with a fork until chunky.
- Add vegan mayonnaise, Dijon mustard, and lemon juice to the chickpeas. Mix well.
- Stir in the diced celery, red onion, and pickles.
- Season with salt and pepper to taste.
- Toast the whole-grain bread slices.
- Spread the chickpea salad mixture onto two slices of bread.
- Top with lettuce leaves and tomato slices.
- Place the remaining slices of bread on top to form sandwiches.
- Slice the sandwiches in half and serve.
