- 2-3 green onions, julienned
- 1 thumb-sized piece of ginger, thinly sliced
- 1 red chili, thinly sliced (optional, for a bit of heat)
- 1/4 cup soy sauce
- 2 tablespoons rice wine or dry sherry
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Fresh cilantro, for garnish
- Salt and pepper, to taste
- Lime or lemon wedges, for serving
- Instructions:
1. **Prepare the Fish:**
- Rinse the fish under cold water and pat dry with paper towels.
- Make three diagonal cuts on each side of the fish to help it cook evenly.
- Season the fish with salt and pepper, rubbing it into the cuts and the cavity.
2. **Prepare the Steaming Setup:**
- Fill a large wok or a deep skillet with about 2 inches of water. Place a steaming rack or a heatproof plate in the center.
- Bring the water to a boil over high heat.
3. **Prepare the Aromatics:**
- Place half of the green onions and ginger slices inside the cavity of the fish.
- Scatter the remaining green onions and ginger over the top of the fish.
- If using, add the red chili slices for extra flavor and heat.
4. **Steam the Fish:**
- Carefully place the fish on a heatproof plate that fits inside your steaming setup.
- Once the water is boiling, reduce the heat to medium-high and place the plate with the fish on the steaming rack.

5. **Prepare the Sauce:**
- In a small bowl, mix the soy sauce and rice wine or dry sherry.
- In a small saucepan, heat the sesame oil and vegetable oil over medium heat until hot but not smoking.
6. **Finish the Fish:**
- Once the fish is cooked, carefully remove it from the steamer and transfer it to a serving plate.
- Pour the soy sauce mixture over the fish.
- Drizzle the hot oil over the fish, which will sizzle and enhance the flavors.
- Garnish with fresh cilantro and serve immediately with lime or lemon wedges on the side.
