Healthy and Delicious Beef Stew


**Ingredients:**

- 2 lbs (about 1 kg) beef stew meat, cut into 1-inch cubes

- 3 tablespoons all-purpose flour

- Salt and pepper, to taste

- 2 tablespoons olive oil

- 1 onion, chopped

- 3 cloves garlic, minced

- 3 carrots, peeled and sliced

- 2 celery stalks, sliced

- 1 lb (450 g) baby potatoes, halved

- 1 can (14 oz / 400 g) diced tomatoes

- 4 cups beef broth

- 1 tablespoon Worcestershire sauce

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- 1 bay leaf

- Fresh parsley, chopped (for garnish)

**Instructions:**

1. **Coat and Brown the Beef:** In a large bowl, toss the beef stew meat with flour, salt, and pepper until evenly coated. Heat olive oil in a large skillet over medium-high heat. Add the beef cubes in batches and brown on all sides, about 3-4 minutes per batch. Transfer the browned beef to the slow cooker.

2. **Prepare the Vegetables:** In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add minced garlic and cook for another 1 minute. Transfer the onion and garlic mixture to the slow cooker.

3. **Combine Ingredients in Slow Cooker:** Add sliced carrots, celery, baby potatoes, diced tomatoes (with juices), beef broth, Worcestershire sauce, dried thyme, dried rosemary, and bay leaf to the slow cooker. Stir everything together to combine well.

4. **Cook the Stew:** Cover and cook on low heat for 4-6 hours, or until the beef is tender and the vegetables are cooked through. Taste and adjust seasoning with salt and pepper if needed.

5. **Serve:** Once cooked, discard the bay leaf. Serve the beef stew hot, garnished with chopped fresh parsley for added flavor and color.

**Tips:**

- For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.

- This stew pairs well with crusty bread or over a bed of mashed potatoes.

- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for longer storage.
