Creamy Tomato Basil Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (28 ounces each) crushed tomatoes
  • 1 cup vegetable broth
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup fresh basil leaves, chopped

Instructions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and cook until softened about 5 minutes.
  3. Add the garlic and cook for another 1-2 minutes.
  4. Stir in the crushed tomatoes and vegetable broth. Bring to a simmer.
  5. Add the coconut milk, balsamic vinegar, sugar, salt, and pepper. Simmer for 15 minutes.
  6. Remove from heat and stir in the fresh basil.
  7. Use an immersion blender to blend the soup until smooth.
  8. Serve hot with crusty bread.
