Creamy Tomato Basil Soup
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans (28 ounces each) crushed tomatoes
- 1 cup vegetable broth
- 1 can (14 ounces) coconut milk
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup fresh basil leaves, chopped

Instructions:
- In a large pot, heat olive oil over medium heat.
- Add the onion and cook until softened about 5 minutes.
- Add the garlic and cook for another 1-2 minutes.
- Stir in the crushed tomatoes and vegetable broth. Bring to a simmer.
- Add the coconut milk, balsamic vinegar, sugar, salt, and pepper. Simmer for 15 minutes.
- Remove from heat and stir in the fresh basil.
- Use an immersion blender to blend the soup until smooth.
- Serve hot with crusty bread.
