Spicy Black Bean Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 can (14 ounces) diced tomatoes
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, garlic, carrots, bell pepper, and jalapeño. Cook until vegetables are softened, about 5-7 minutes.
  3. Stir in the cumin and smoked paprika and cook for another minute.
  4. Add the vegetable broth, black beans, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Use an immersion blender to partially blend the soup, leaving some chunks for texture.
  6. Season with salt, pepper, and lime juice.
  7. Garnish with fresh cilantro and serve.
