Spicy Black Bean Soup
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 1 red bell pepper, diced
- 1 jalapeño, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 4 cups vegetable broth
- 2 cans (15 ounces each) black beans, drained and rinsed
- 1 can (14 ounces) diced tomatoes
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)

Instructions:
- In a large pot, heat olive oil over medium heat.
- Add the onion, garlic, carrots, bell pepper, and jalapeño. Cook until vegetables are softened, about 5-7 minutes.
- Stir in the cumin and smoked paprika and cook for another minute.
- Add the vegetable broth, black beans, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to partially blend the soup, leaving some chunks for texture.
- Season with salt, pepper, and lime juice.
- Garnish with fresh cilantro and serve.
